Delisa's Lasagna


To Prepare:
  • Cook 9 lasagna noodles and drain. Rinse in cool water
  • Make 1 recipe of cheesy sauce
  • Make 1 recipe of “Parmesan Cheese”
  • Mash 1 lb. tofu, and stir in 1/2 tsp each: salt, onion powder
  • Thaw 1 pkg. frozen, chopped spinach, squeeze out all water, and mix with mashed tofu.
  • Have on hand prepared spaghetti sauce (It’s good to put some cooked veggies in the sauce, e.g. broccoli, zucchini, carrots, mushrooms, but this is optional.)
To assemble lasagna:
  • Spread small amount of Spaghetti Sauce in bottom of 9 x 13
  • Layer 3 lasagna noodles on sauce
  • Layer more spaghetti sauce next
  • Layer 1/2 of the mashed tofu next
  • Layer 1/2 of the cheesy sauce
Repeat:
  • 3 Noodles
  • More spaghetti sauce
  • Rest of the mashed tofu
  • Rest of cheesy sauce
Last:
  • 3 Noodles
  • More spaghetti sauce
  • Sprinkle “Parmesan Cheese” on top
Bake:
350 degrees for about 35 minutes
