Black Bean Salad


Ingredients:
1   red bell pepper, cut into 1/4" pieces
1   green bell pepper,
cut into 1/4" pieces
1   yellow bell pepper, cut into 1/4" pieces
1/2 cup  red onions, cut into 1/4" pieces
1 - 15 oz. can corn, drained
1   clove garlic, minced
1 tsp  cilantro, dry
2 Tbsp  olive oil
3 Tbsp  red wine vinegar
1 tsp  lime juice
    Fresh ground pepper to taste
1 - 15 oz. can black beans (rinsed and drained)

Preparation:
Mix in salad bowl:  peppers, onion, corn, garlic, cilantro.
Stir in olive oil, vinegar, lime juice and black pepper,
then, add black beans, toss and serve.

6-8 servings
